We take pride in providing succulent yellowfin and bigeye tuna (known in the islands as ahi), swordfish, mahimahi, wahoo (ono), moonfish (opah), hebi (spearfish), marlin, pomfret (monchong), escolar, and mako shark. It’s so fresh when we process it that we don’t need to use any preservatives to mask the quality – try it for yourself.

Escolar has a rich, buttery flavor and is often called “white tuna.” Its texture is silkier than tuna, though, and it’s a good choice for grills, sautés, and stuffed entrées.
